1. Island-Inspired Breakfast
Start the day by changing the mood.
You don’t need anything elaborate — presentation does most of the work.
Easy Tropical Fruit Platter
Pineapple
Mango
Banana
Grapes
Coconut flakes (optional)
Arrange on one big platter and call it your “Island Feast”.
“Sand” Pancakes Recipe (Brown Sugar Pancakes)
Ingredients
1 cup plain flour
1 tbsp brown sugar
1 tsp baking powder
1 egg
1 cup milk
1 tbsp melted butter
Mix dry ingredients. Whisk in egg, milk and butter. Cook as normal pancakes.
Sprinkle with a little extra brown sugar before serving for a “sandy beach” effect.
Let the children eat picnic-style on a blanket if you can — even if it’s in the living room.

After breakfast, head out for a “Rainforest Expedition”.
